Coconut Kisses

This is a tropical treat to enjoy in the North when snow is up to your knees.

What you'll need

1 cup sweetened coconut flakes
1/2 cup condensed milk
1 large egg, slightly beaten

How to make it

Preheat oven to 300 degrees. In a small bowl mix coconut flakes, condensed milk and slightly beaten egg to make a thick batter. Using a melon baller or teaspoon, scoop up balls of mixture and drop onto greased cookie sheet. Bake for 18 minutes or just until macaroons begin to brown. Transfer to rack and allow to cool completely before storing in airtight container. Makes around 18 kisses.

Go wild with these jungle-toy cards.

What you'll need

  • wild-animal figurines
    card stock
    glue stick
    animal-patterned paper
    hole punch
    yarn
    white paper

How to make it

  1. We made our menagerie with wild-animal figurines (collections are sold in tubes at craft stores).
  2. Cut card stock into 2 1/2- by 8 1/2-inch pieces. Use a glue stick to mount 2- by 6 1/2-inch pieces of animal-patterned paper to the cards.
  3. With a hole punch, make two holes in each card, then tie an animal onto the card with yarn.
  4. Cut speech bubbles from white paper. Write a funny message on each and adhere it to the card with the glue stick.

Crab Salad Tostadas

This Lenten season I decided to change our lunch menu from the usual meatless dishes. Today I made crab salad tostadas. It’s a delicious no cook meal that is ready in just minutes.

What you'll need

  • 8 ounces of crab meat, cubed
    1 cup canned corn, drained
    ¼ cup onion, chopped
    ½ cucumber, peeled and finely chopped
    3 tablespoons cilantro, chopped
    ½ cup mayonnaise
    salt and pepper to taste
    8 corn tostadas

How to make it

  1. In a large bowl place all the ingredients. Stir with spatula or wooden spoon until combined. Spoon mixture on top of tostada, drizzle with lime juice and enjoy!
